Our company has been operating meat manufacturing and wholesale business in Japan, specifically in Niigata, for over 50 years. Approximately 10 years ago, we started our overseas export business, and as of now (March 2024), we export to 7 countries worldwide. Our 'Snow Aged Wagyu,' aged using a pioneering method, has already been adopted by luxury hotels and restaurants in various countries. We aim to further expand our overseas exports in the future.

Allow me to introduce our ""Snow Aged Wagyu,"" which is currently exported to seven countries worldwide. We age Japan's renowned high-quality Wagyu beef in the natural refrigerator of Echigo Uonuma, known as the ""snow room."" Slow aging in the snow room brings out a mellow richness and tenderness. [Structure of the Snow Room] The snow room, a natural refrigerator dating back to the Edo period, operates without using any electricity. Resembling an igloo, it is built from snow accumulated during the severe cold. With approximately 1,500 tons of snow covering the storage facility, it maintains a constant temperature and humidity throughout the year, regardless of whether it's a scorching 35°C summer day or a freezing -5°C winter night. [Advantages of the Snow Room] While conventional refrigerators fluctuate in temperature (approximately -1 to 10°C) and humidity (approximately 30-99%) due to the thermostat, the snow room maintains consistently low temperature and high humidity, providing a stable environment. This stability allows for slow aging of food without subjecting it to stress. Moreover, minimal drip leakage preserves the flavor without loss during aging. [Contribution to SDGs - Contribution to Preventing Global Warming through the Use of Clean Energy] The snow room utilizes the cold energy of snow. By effectively utilizing snow through ""snow utilization (utilizing and coexisting with snow),"" we reduce CO2 emissions. By utilizing 400 to 700 tons of snow annually, we reduce CO2 emissions by 12 to 21 tons. [World's First Aging Method] We adopted a aging method that utilizes the cold energy of snow, a world-first. Unlike dry aging, our wet aging method is hygienic without the risk of mold growth. Furthermore, it requires no trimming, resulting in high yield and minimal effort. Through numerous experiments, we have determined the optimal aging period. [Characteristics of the Meat] The breakdown of protein increases the content of free amino acids, enhancing umami and sweetness by approximately three times. Enzymes work vigorously, breaking down meat fibers to achieve remarkable tenderness. Additionally, improved fat melt and smoothness result in a gentle mouthfeel.
