Since 1950, our company has been engaged in seafood processing, starting with the production of ""Katakuchi iwashi"" (small dried sardines), ""kazunoko"" (herring roe), ""shirauo"" (dried young sardines), ""komochi"" (dried shirasu), and other products. Over the years, we have expanded our operations to include processing of ""kodomochi"" (young Pacific saury) and ""futoshishamo"" (adult Pacific saury), and currently, we collaborate with major manufacturers to develop and sell additive-free fry series and other products.
Our additive-free products, made with carefully selected ingredients, have earned the trust of many customers. We supply our products to various customers, including mass retailers, school cafeterias, department stores, izakaya (Japanese pubs), and traditional Japanese restaurants.
Description of Products for Trade Inquiry
Our raw materials are directly sourced by our staff who travel to Newfoundland and Iceland in Canada each year, where they oversee the catch and conduct rigorous inspections to procure the best quality. Because of this direct sourcing, we take pride in offering our customers products they can enjoy with peace of mind. Furthermore, while many products like the Karafuto Shishamo are processed in China, our products are processed in Oarai, Ibaraki Prefecture. We believe that the two-week transport time from China is not ideal for the quality of our products. At Yamaisi, we prioritize offering our customers freshly made products immediately after processing.
We believe that 'additive-free' means providing customers with food they can enjoy with peace of mind. From the sourcing of raw materials, we avoid the use of additives such as preservatives, colorings, and antioxidants. Additionally, all seasonings used are made from natural ingredients. While we do not use additives, we ensure that the taste remains delicious and consistent with traditional products. This has been achieved through a two-year collaboration with major breadcrumbs and flour manufacturers.

Commitment to Manufacturing
Through over 50 years of manufacturing experience, we have gradually developed our unique production methods. As a result, our products have significantly improved in appearance, taste, texture, and hygiene aspects, with general bacterial growth inhibited, enhanced visual appeal during sales display (less blue hue), and reduced dripping. Our product evaluation has seen remarkable improvement.
Emphasis on Raw Material Procurement
The raw materials for Karafuto Shishamo from Canada are landed in Newfoundland, located off the east coast of Canada, around July every year. During this period, our employees are dispatched to work alongside local fishermen and packers to ensure the production of high-quality raw materials. This procurement work has been carried out for over 40 years across two generations, maintaining continuity and fostering relationships with local Canadians to build trust and reassurance, a practice we continue annually.
Despite the instability of raw materials from Northern Europe in recent years, we have been able to procure high-quality raw materials without interrupting stable supply. Moving forward, we will continue to strengthen the trust and relationship with our local partners, building upon the trust we have cultivated thus far."
